The Science of Polishing: Why Grinding Away Rice Makes Better Sake
Sake rice is polished to strip away the grain’s outer layers, where proteins, fats, and minerals sit, and to expose the pure starch at its centre. Those outer components are the raw material for rough, heavy, off-balance flavours, so removing them is one of the most direct ways a brewer shapes the taste in the glass. It is closer to trimming the fat off a cut of meat than to sharpening a pencil.
This single step, called seimai (精米), explains one of the most visible numbers on any sake label. It also explains a common misunderstanding: that more polishing simply means better sake. It does not. Polishing sets a style, not a rank.
Why is sake rice polished at all?
Because a grain of rice is not uniform, and only its centre is ideal for brewing. Picture the grain as a target. At the bullseye is the shinpaku (心白), a white, opaque core of loosely packed starch. Radiating outward are layers increasingly rich in protein, fat, minerals, and vitamins. Those nutrients are wonderful in a bowl of rice at dinner, but in the fermentation tank they cause problems.
When too much protein and fat make it into the brew, they generate what Japanese brewers call zatsumi (雑味): a rough, cluttered, slightly bitter quality, along with darker colour and unwanted aromas. Polishing physically removes those outer layers before brewing begins, leaving behind starch that ferments cleanly. The whiter, starchier centre is also an easier home for koji mould to colonise, which matters because koji is what converts that starch into fermentable sugar in the first place.
What does the number on the label mean?
It tells you how much of the grain is left, not how much was removed. This trips up almost every newcomer, so it is worth stating plainly.
Seimaibuai (精米歩合) is the percentage of the original grain remaining after polishing. A seimaibuai of 70% means 30% of each grain has been milled away and 70% remains. So a lower number means more polishing, the opposite of what intuition suggests. The notification that governs sake labelling defines it in weight terms rather than by eye: seimaibuai is the weight of the milled white rice as a proportion of the brown rice it started as (National Tax Agency Notification No. 8 of 1989).

What actually changes when you polish more?
Two things, chemically. First, you remove protein. During fermentation, protein breaks down into amino acids, and while some amino acids give sake its savoury depth, too many make it heavy and rough. Polishing dials that down. Second, you remove lipids, the fats concentrated near the grain’s surface. Fats suppress the fruity, floral aroma compounds (esters) that define ginjo-style sake, so stripping them away is what lets those high, apple-and-pear notes emerge. Where the ladder is drawn is a legal matter, not a house custom: the same notification permits the word ginjo only at a seimaibuai of 60% or less, and daiginjo at 50% or less.
That is the real reason a heavily polished daiginjo smells so fragrant and tastes so clean: not because it is inherently “better,” but because the brewer has removed most of the material that would otherwise mute the aroma and add weight.
The medical way to see this is nutrient distribution. A rice grain concentrates its starch in the centre and its proteins, fats, and minerals toward the surface, exactly the layers we mill away. Polishing is, in effect, a deliberate act of subtraction: the brewer isn’t adding flavour, but removing the compounds that would otherwise crowd it out. Great sake is often defined by what has been taken away.
Does more polishing always mean better sake?
No, and this is the correction worth carrying with you. It is easy to read a very low seimaibuai as a quality score, but polishing away more of the grain simply produces a different style, lighter and more aromatic, not a superior one. Heavily milled sake is more expensive largely because it uses more rice and more labour to make the same volume, not because delicacy is automatically the goal.
Plenty of drinkers prefer the fuller, rice-driven character of a less-polished sake, especially at the table, where a fragrant daiginjo can be overwhelmed by strongly flavoured food. In that sense sake is no different from wine: a lighter, more perfumed bottle isn’t better than a bold, structured one, it is a choice about the mood and the meal.

Why is sake rice polished more than table rice?
Because sake wants only the starchy core. Table rice keeps its outer layers for flavour and nutrition, but in brewing those same proteins and fats create rough, off-balance flavours, so brewers mill them away to reach the clean starch at the centre.
Does a lower seimaibuai mean higher quality?
Not necessarily. A lower number means more of the grain was polished away, which yields a lighter, more aromatic style. That is a stylistic difference, not a ranking; many excellent sakes are only lightly polished.
What is shinpaku?
Shinpaku is the white, opaque starch core at the centre of a sake-suitable rice grain. Its loosely packed starch is ideal for koji mould to penetrate and convert into sugar, which is why brewers polish toward it.
What is zatsumi?
Zatsumi is the Japanese term for the rough, cluttered, slightly bitter flavours that come from too much protein and fat in the brew. Polishing reduces zatsumi by removing the grain’s outer layers.
