Suehiro Shuzo has brewed in Aizuwakamatsu since 1850, and its most consequential contribution to Japanese sake came from a collaboration: working with brewing scientist Kagi Kinichiro, the kura helped develop the yamahai method now used by breweries nationwide. That same patient, natural-fermentation approach still defines the house style, and its sake has at times been served to the Imperial Household. Family-run for eight generations, Suehiro also helped establish the Aizu toji guild after inviting an outside brewer in the Meiji era.
