Aramasa sake comes from a single brewery in Akita City that gave the entire industry one of its foundational tools: Kyokai No. 6 yeast, a wild strain isolated from the brewery’s own fermenting mash in 1930. Under its current, eighth-generation head, the brewery has spent the last decade and a half stripping its production down to all-junmai, all-kimoto, all-Akita-rice brewing with only that one yeast — a set of choices that reads, on paper, like sake’s version of the natural wine movement. The comparison is useful as a starting point, but the details matter more than the label.

What is Aramasa sake?

Aramasa is the brand name of Aramasa Shuzo, a brewery founded in 1852 in Akita City, in Akita Prefecture on Japan’s northern main island. The brewery began under the Sato family, and the name Aramasa — loosely, “renewed righteousness” — was adopted later, tied to an idea of returning to sound values rather than chasing novelty for its own sake. Akita itself matters to this story. It is a heavy snowfall region on the Sea of Japan side of Tohoku, with long, cold winters that suit slow, low-temperature fermentation — the same conditions that made the brewery’s yeast discovery possible in the first place.

Where did Kyokai No. 6 yeast come from?

Kyokai No. 6 was isolated in 1930 from sake already fermenting in a tank at Aramasa Shuzo, and it was catalogued and distributed nationally by the Brewing Society of Japan (Nihon Jozo Kyokai) in 1935. “Kyokai” simply means “association” — the numbered yeasts are strains the Society selected from real breweries and then made available, in ampoule or powder form, to any licensed brewery in the country. That distribution system is still running: the Brewing Society of Japan sells its numbered sake strains as ampoules, mini-pouches and dried yeast, with separate lineups for shochu and wine (Brewing Society of Japan, kyokai yeast).

No. 6 stood out because it ferments cleanly at low temperatures, in the 10–12°C range, producing a lighter body and a more fragrant aroma than the yeasts brewers were using before it. That low-temperature, long-fermentation profile is widely credited as an early blueprint for what would later become ginjo-style brewing. It also outlasted its immediate predecessors: Kyokai Nos. 1 through 5 were withdrawn from distribution over time, while No. 6 remains in active circulation today alongside newer numbered strains such as 7, 9, 10, 11, and 14 — making it the oldest association yeast still in commercial use.

Is No. 6 a specially engineered yeast?

No. It is a naturally occurring strain that brewers found already at work in a fermenting tank, not something bred or engineered in a laboratory. This is a point worth correcting, because English-language sake writing sometimes implies the numbered “Kyokai yeasts” are lab creations comparable to patented commercial wine or beer yeasts. In practice, the early numbered strains — No. 6 included — were wild yeasts that showed unusually good, consistent fermentation behavior at specific breweries; the Brewing Society’s role was to isolate, purify, and standardize them for wider use, not to design them from scratch. Aramasa states the connection itself: the brewery was founded in 1852, describes itself as the birthplace of kyokai No. 6 — the oldest commercially distributed sake yeast still in existence — and today brews everything as junmai, using kimoto starters and Akita-grown rice only (Aramasa Shuzo, official site).

That said, precision cuts both ways here: once No. 6 became a distributed, quality-controlled culture available to any licensed brewery, it stopped being a purely local, uncontrolled phenomenon. A brewery using No. 6 today is pitching a purified strain descended from that 1930 discovery, not fermenting on whatever happens to be floating in the air of its own kura that season. What changed at Aramasa under its current generation?

Since initiating his radical brewing reforms in 2009 (before formally becoming eighth-generation president in 2012), Yusuke Sato — a University of Tokyo literature graduate who worked as a writer before returning to the family business — converted the brewery to a small set of firm rules that now apply across its entire line:

Is this sake’s version of the natural wine movement?

The comparison is a fair entry point but not an exact match, because Aramasa’s kimoto method is a return to an older Japanese technique rather than a rejection of modern science, and its single yeast is still a purified, quality-controlled culture rather than uncontrolled ambient fermentation. A common assumption on English-language sake sites is that kimoto-style, low-intervention sake is a recent trend, invented in response to natural wine’s popularity abroad. It’s actually the other way around: kimoto is the older of Japan’s two main starter methods, with instructions appearing in brewing manuals as far back as the Genroku era (1688–1704), while the now-standard sokujo method — which adds commercial lactic acid directly instead of cultivating it slowly — was only developed in 1910 and spread from 1911 onward. Aramasa’s “return” to kimoto is a return to what sake brewing looked like before a lab shortcut became the industry default, not an import from wine culture.

Independent view: Not everyone in the trade reads a single-yeast, single-region approach as an unqualified improvement. Some brewers and researchers point out that Japan’s numbered yeast system exists precisely because different strains give brewers a reliable way to hit different aromatic targets — and that committing an entire line to one 1930s strain trades some of that range for a clearer story, which isn’t automatically the same thing as a better cup in every glass.

None of this makes Aramasa’s sake objectively superior to sake made with multiple yeasts, sokujo starters, or rice sourced from outside Akita — those are simply different, well-established approaches within the same category, the same way a winemaker choosing native-yeast fermentation isn’t automatically outperforming one who inoculates. The point of the story is what it shows about sake’s own history: the “old” way and the “natural” way are, in this case, the same thing.
